These mushroom pepperonis have elevated our pizza nights. So tasty and easy to prepare. Just slice, season, and bake! We enjoy them on our semi-homemade pizzas using already prepared pizza dough from stores. We also pick up pizza sauce and vegan cheese to make this as simple, easy, and quick.

Simple ingredients: It really just takes a few pantry staples to make this vegan mushroom pepperoni.
Make ahead: You can have these made in advance and just top your pizza before putting it in the oven.
Taste: A good mix of seasonings is all you need to replicate flavors. Traditional Pepperoni uses paprika, garlic, and herbs, and we will be using the same.
What mushrooms to use for vegan pepperoni
Any mushrooms would probably taste delicious with this marinade. We use king oyster mushrooms for its shape and density. Sliced white button mushrooms would be fine, just keep in mind they will shrink a lot.

King Oyster Mushroom Pepperoni
Crispy around the edges, tender in the middle, and full of umami flavor. Use these on your homemade pizza, frozen pizza, or takeout!
Prep: Slice 3 king oyster mushrooms about ยผ inch thick.
Make the marinade: Combine 2 Tbsp oil, 3 Tbsp soy sauce, ยฝ Tbsp italian seasoning, ยฝ Tbsp paprika, 1 tsp garlic powder, 1 tsp onion powder, ยฝ tsp turmeric, and ยผ tsp salt and pepper.
Coat: Toss in the sliced king oyster mushrooms and mix until fully coated pieces.
Bake: Spread on a baking sheet and bake for 20 minutes, flipping the slices half way through the baking.
Enjoy! Use on pizza, sandwiches, wraps, charcuterie boards, or enjoy with crackers.
Notes
To make a quick semi-homemade pizza at home, we use store bought pizza sauce, vegan cheese, and pizza dough.Feel free to bake the pizza with the prepared mushroom pepperonis if you want them to be crispier, or toss them over an already baked pizza.
