Garbanzos Fritos

One of our favorite quick meals is this take on Spanish garbanzos fritos, they are so filling and satisfying! A smoky chickpea stir-fry seasoned with basic kitchen staples, and finished with handfuls of iron rich spinach for an easy and quick meal.

Ingredients

  • 1 can Chickpeas (drained)
  • 2 cups Spinach (tightly packed)
  • 1 Onion (diced)
  • 2 cloves Garlic (chopped)
  • 1 Tbsp Tomato paste
  • 1 tsp Smoked paprika
  • ¼ tsp Salt
  • 1-2 Tbsp Olive oil (for sauteing )

Instructions

  • Gather all the ingredients. Dice 1 Onion and chop 2 cloves Garlic. Open and drain 1 can Chickpeas.
  • In a large pan heat 1-2 Tbsp Olive oil and cook the onion until soft.
  • Add the garlic and cook for a few seconds before adding 1 tsp Smoked paprika and ¼ tsp Salt. Then add in 1 Tbsp Tomato paste. Let the flavors cook. Add the chickpeas and use a splash of water to deglaze the pan.
  • Add 2 cups Spinach, mix to combine. Taste and add more salt if needed. Serve over rice, warmed pita, or enjoy as is.

Notes

Feel free to add soy chorizo for a little more bite.
