Raw Cinnamon Rolls
No need to turn on the oven for these easy vegan gluten-free raw cinnamon rolls!
Prepare the Base: In a food processor, blend the oats and pecans until powdered (about 1 to 2 minutes). Just keep an eye on them to avoid over-processing; you want a fine powder, but not nut butter! Add the water, flax, maple syrup, vanilla extract, and salt. Process until the mixture is sticky and holds together.
Form the Dough: Lay a piece of parchment paper on your counter. Spread the mixture on it (try to make an even rectangular shape using your spatula), then cover with another piece of parchment. Press down with your hands or a rolling pin to shape it into a rectangle about ยฝ inch thick.
Prepare the Filling: In a food processor, blend the pitted dates, pecans, water, cinnamon, vanilla extract, and salt. It's ok to have pieces of pecans for texture.
Add the Filling: Remove the top parchment paper from the base and spread the filling mixture over the top leaving about a ยฝ inch at the bottom.
Roll It Up: Carefully roll the dough into a log shape using the parchment paper to help you. Wrap it tightly and place it in the fridge for about 30 minutes to firm up.
Slice and Serve: Once chilled, slice the log into rolls and serve!
