Although it has been a while, I&#8217;ve been making these mashed chickpea salad sandwiches for sometime now. It&#8217;s simple, makes for a great meal prep, and it&#8217;s a quick go-to recipe for when we don&#8217;t know what to eat for lunch.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img
