Traditionally in Peru the crust is cut off, but we find that wasteful and unnecessary. This is our vegan version of the recipe, we&#8217;ve replaced the hard boiled egg for tofu. Like in our <strong><a href=\"https:\/\/somevegancouple.com\/staging\/tofu-scramble-a-la-mexicana\/\" target=\"_blank\" rel=\"noopener\" title=\"\">tofu scramble recipe<\/a><\/strong>, in order to get that &#8220;eggy&#8221; flavor simply use black salt (AKA kala namak).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul
