This salty, sweet, savory sandwich was one of Elvis's favorites for good reason!
We debated even posting this recipe since it's so simple, but as someone who didn't grow up eating peanut butter, I find it valuable. A simple peanut butter sandwich is a great complete protein, just like rice and beans together create a complete protein! It's vegan, easy, cheap, and delicious! No wonder Elvis indulged in these sandwiches often!
What is an Elvis Sandwich?

- Banana
- Bread
Unique ingredient
- Banana peel: This will be our "bacon", and we'll be using our original banana peel "bacon" recipe but you can always use a vegan store bought option of your choice. We personally just find it so cool to reduce food waste. Just make sure to wash the peel thoroughly to remove any pesticides or contaminants! We prefer to buy organic bananas when we eat the peel. They still need to be washed before consuming, but they typically have fewer pesticides.

- Maple syrup

How to cook the dish
How to make banana bacon
- Wash: Make sure to wash the banana before peeling.
- Peel: Cut the ends off and peel the banana.
- Scrape: Use a spoon to scrap the inside of the peel.
- Marinate: Combine the ingredients for the marinade and let the peels soak up the flavors in your fridge while you prep the rest.

Ingredients
Banana Peel Bacon
- 3 organic bananas ripe
- 4 Tbsp soy sauce
- 1.5 Tbsp maple syrup
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 Tbsp oil for frying
Sandwich
- 2 slices bread
- 2 Tbsp peanut butter
- 1 banana sliced
- butter for grilling
Instructions
Banana Peel Bacon
- Wash and peel ripe bananas
- Use a spoon to scrape the insides of the peel and cut peels to your preferred width
- Make the marinade by combining soy sauce, maple syrup, paprika and garlic powder
- Add peels to marinade and let it sit for 10 minutes
- Heat up a frying pan with oil and fry the peels for a few minutes on each side. Drizzle some of the remaining marinade to the peels as they cook
- Remove the peels from the pan onto a dish with some paper towels to soak up the excess oil
Elvis Sandwich
- Slice the banana and spread butter on one side of each slice of bread.
- Spread a thick layer of peanut butter on one slice of bread and lay the sliced banana and banana peel bacon on the peanut butter and top with the other slice of bread.
- Fry or grill the sandwich on medium-high heat.
- Slice in half and enjoy.
