Rice Cake Tiramisu Cups (no-bake)

A quick no-bake tiramisu dessert using rice cakes and other simple store bought ingredients.

As fans of coffee and light desserts, this no-bake tiramisu is a huge hit in our home. Plus, you guys know we don't bake much. Our desserts typically include a plate of nuts, dried fruits and dark chocolate. So if a recipe is quick, simple, and no need to turn on the oven, we love it even more. This recipe can obviously be enjoyed by anyone, it's a nice easy treat to make at home for you or your loved one.

Ingredients

  • Rice cakes: plain or lightly salted ones
  • Yogurt: we used plant based vanilla yogurt
  • Coffee: we use espresso, but feel free to use whatever you enjoy
  • Protein powder: we use pea protein
  • Maple syrup: or sweetener of your choice
  • Cocoa powder: to top

How to prepare

  1. Gather all your ingredients.

2. In a mixing bowl, add the yogurt and protein powder.

3. Mix the yogurt and protein powder until combined.

4. Brew some coffee, sweeten with maple syrup or sweetener of choice, and pour it onto a shallow dish or bowl.

5. Place the rice cakes in the coffee.

6. Let the rice cakes soak on each side for a few seconds.

7. Grab a cup and assemble. Placing a rice cake at the bottom and layering it with the yogurt.

8. Top with cocoa powder and enjoy!

How to serve

  • In a cup!
  • Serve it stacked on a plate instead if a cup.
  • Create a larger portion of it to serve in a trifle bowl.

How to store

This recipe is best made when ready to eat. However, you can brew the coffee ahead of time and store in your fridge until ready to assemble.

Variations and substitutions 

  • If you want a sweeter flavor and wetter texture you can omit the protein powder.
  • Adjust flavors to your liking.

Tips for customization

Try coating the top or mixing the coffee with different seasonings, while we used cacao powder for the top, you can also try:

  • pumpkin spice blend
  • nutmeg
  • cinnamon
  • cinnamon-sugar
  • grated chocolate
  • whipped cream and cocoa powder
  • top with fresh fruit like berries

Rice Cake Tiramisu Cups

Instructions

  • Mix 1 cup vanilla vegan yogurt and 1 scoop protein powder until fully combined.
  • Brew 1 cup coffee and sweeten with 1 Tbsp maple syrup in a shallow dish.
  • Place the rice cakes in the coffee maple syrup mixture, allow to soak on each side for a few seconds.
  • Alternate layering three rices cakes and the yogurt protein powder mixture, topping with the yogurt mixture.
  • Dust 1 tsp cacao powder on top and enjoy!
