Cut your 6 red potatoes into cubes. Place in a pot and fill with enough water to cover the potatoes. Boil until you can pierce with a fork, about 15 minutes. Drain and set aside.
While the potatoes boil, chop ½ small red onion, 1 stalk celery, ¼ cup fresh parsley, ¼ cup fresh dill and mince 1 clove garlic.
Combine all ingredients in a bowl, adding ¼ cup vegan mayonnaise, 1 Tbsp dijion mustard, and 1 Tbsp apple cider vinegar.
Season with salt and pepper to taste, refrigerate for at least 30 minutes or until cold before serving and enjoying!
Notes
Refrigerate for at least 30 minutes, but the longer the flavors sit together while cooling the better it will taste.
