Peruvian Triple Sandwich with Tofu (Sándwich Triple)

Ingredients

  • 1 block tofu
  • 2-3 Tbsp vegan mayonnaise (adjust to your liking)
  • ½ Tbsp black salt (black salt)
  • 1 avocado
  • 1 tomato
  • salt and pepper (to taste)
  • 3 slices bread

Instructions

Prepare the Tofu

  • Drain and squeeze out the excess liquid from 1 block tofu using your hands or a clean kitchen towel.
  • Cube the tofu and gently mix it in a bowl with 2-3 Tbsp vegan mayonnaise and 1/2 Tbsp black salt.

Sandwich Assembly

  • Gather 3 slices bread. Slice 1 avocado and 1 tomato and sprinkle some salt and pepper. Lay avocado on one slice of bread, then top that with the tofu mixture.
  • Stack on a slice of bread and layer on the tomato.
  • Spread a small amount of vegan mayo on the last slice and top it. Serve and enjoy!

Notes

Normally the crust is cut off the sandwich, then wrapped in shrink wrap and sliced for better packaging, but not necessary if you want to avoid waste and plastic.
