Equipment

  • 1 mixing bowl
  • 1 shallow dish
  • 2 cups for serving

Ingredients

  • 1 cup vanilla vegan yogurt
  • 1 scoop protein powder (we use pea protein)
  • 1 cup coffee (prepared)
  • 1 Tbsp maple syrup
  • 1 tsp cacao powder (for dusting on top)
  • 6 rice cakes

Instructions

  • Mix 1 cup vanilla vegan yogurt and 1 scoop protein powder until fully combined.
  • Brew 1 cup coffee and sweeten with 1 Tbsp maple syrup in a shallow dish.
  • Place the rice cakes in the coffee maple syrup mixture, allow to soak on each side for a few seconds.
  • Alternate layering three rices cakes and the yogurt protein powder mixture, topping with the yogurt mixture.
  • Dust 1 tsp cacao powder on top and enjoy!
