1 large mixing bowl
1 loaf pan
- 3 ripe bananas
- ⅓ cup apple sauce
- ⅓ cup sugar
- 2 Tbsp soy milk
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup nuts
- ¼ cup chocolate
Preheat oven to 350 °F and gather all your ingredients.
In a large mixing bowl, place the 3 ripe bananas and mash them using a fork. Small lumps of banana are okay. Then add ⅓ cup apple sauce, ⅓ cup sugar, 2 Tbsp soy milk, 1 tsp vanilla extract - mix that all up using the fork.
Now add 2 cups all purpose flour, 1 tsp baking soda, 1 tsp baking powder, ¼ tsp salt - gently mix until most of the flour has been combined. Try not to over mix.
Roughly chop and add ¼ cup nuts and ¼ cup chocolate, gently fold that into the mixture and pour into a loaf pan with parchment paper. Top with some chopped nuts and chocolate if you want.
Bake in oven for 40 minutes or until toothpick comes out clean.
