Creamy White Beans

- 1 can cannellini beans
- 4 cloves garlic
- 1 small onion
- 1 Tbsp tomato paste
- 1 tsp smoked paprika
- 1 pinch black pepper to taste
- 2 cups fresh spinach about two handfuls
Mince the 4 cloves garlic and dice the 1 small onion.
Heat olive oil on medium-high heat and add the garlic and onion once hot. Saute garlic and onion until soft, then add 1 tsp smoked paprika and cook for a about minute.
Add 1 Tbsp tomato paste and 1 can cannellini beans (including the liquid), lower heat to medium and cook for about 5 minutes, stirring occasionally.
Turn off heat and add 2 cups fresh spinach, stir in until spinach has reduced in size. Add some 1 pinch black pepper to taste.
Serve with some warm toast and enjoy!
To make this recipe in under 10 minutes, use powdered garlic and onion, and for an added cheesy creaminess you can pour in a little miyokos pourable mozzarella cheese.
