In a large bowl, mix the pumpkin puree, maple syrup, coconut oil, vanilla extract, pumpkin spice mix, salt and black pepper.
Add the oats to the wet mixture and stir to thoroughly coat.
Evenly spread the granola on a large baking sheet making sure to press down on the oats.
Bake for 15 minute increments. Flip with a spatula and continue baking for 15 minutes or until granola is light brown and mostly dry.
Let it cool completely (about 10 minutes) before storing in an airtight container.

Three Ingredient Recipe for Pumpkin Spice SauceTo get better clumps, make sure to press down on the oats before baking. You can still flip it halfway through and press it down afterwards to ensure clump formation.After baking, let the granola rest in the oven while its off, this will help achieve a crunchy granola.
