Tofu Feta

- 1 14 oz Firm Tofu cubed
- 3 Tbsp Apple Cider Vinegar
- 3 Tbsp Olive Brine
- 1 large Lemon juiced
- 2 tsp Salt
- 1 tbsp Italian Seasoning optional
Remove as much liquid from the tofu as possible.
Use a knife to cut the tofu into cubes or break apart using your hands.
In an airtight container, combine the lemon juice, apple cider vinegar, olive brine, salt, and Italian seasoning (if using).
Put the tofu cubes or chunks in the container. Cover, shake, and let it marinate in your fridge for at least 30 minutes.
Serve cold and enjoy as a salad topping or as a side with olives, or however you would normally enjoy feta!
