Tofu Feta

This salty tangy tofu feta is a quick and easy alternative to feta cheese. It only takes 5 ingredients and 5 minutes to prepare!

Ingredients

  • 1 14 oz Firm Tofu cubed
  • 3 Tbsp Apple Cider Vinegar
  • 3 Tbsp Olive Brine
  • 1 large Lemon juiced
  • 2 tsp Salt
  • 1 tbsp Italian Seasoning optional

Instructions

  • Remove as much liquid from the tofu as possible.
  • Use a knife to cut the tofu into cubes or break apart using your hands.
  • In an airtight container, combine the lemon juice, apple cider vinegar, olive brine, salt, and Italian seasoning (if using).
  • Put the tofu cubes or chunks in the container. Cover, shake, and let it marinate in your fridge for at least 30 minutes.
  • Serve cold and enjoy as a salad topping or as a side with olives, or however you would normally enjoy feta!
