Tropical Fruit and Hummus Sandwich

French vinaigrette

baguette
Homemade Hummus

chickpeas

cup
tahini

water
ice cold

lemons
juiced

cumin

tsp
baking soda
salt
to taste
drizzle
olive oil
when ready to serve
Homemade French Vinaigrette Dressing
¼
cup
Dijon mustard
¼
cup
olive oil
¼
cup
red wine vinegar
salt and pepper
to taste
Instructions
If using frozen fruit. Let them thaw at room temperature while you prepare the rest of the ingredients.
Slice the baguette in half and spread a thin layer of hummus on both sides.
Add lettuce, cucumbers, and tomatoes.
Chop the mango, papaya, pineapple and avocado. Toss it together in a bowl and add it to the sandwich.
Top it with a generous drizzle of French vinaigrette dressing.
Wrap the sandwich in parchment paper or foil, and enjoy!
