Tropical Fruit and Hummus Sandwich

Inspired by the delicious tropical hummus sub at La Sandwicherie in Miami.

Ingredients

Sandwich Fillings

  • mango, pineapple, papaya diced
  • avocado diced
  • cucumber sliced
  • tomato sliced
  • Romain lettuce
  • hummus store bought or homemade
  • French vinaigrette store bought or homemade
  • baguette

Instructions

  • If using frozen fruit. Let them thaw at room temperature while you prepare the rest of the ingredients.
  • Slice the baguette in half and spread a thin layer of hummus on both sides.
  • Add Romain lettuce, cucumber, and tomato.
  • Chop the mango, pineapple, papaya and avocado. Toss it together in a bowl and add it to the sandwich.
  • Top it with a generous drizzle of French vinaigrette dressing.
  • Wrap the sandwich in parchment paper or foil, and enjoy!
