Tropical Fruit and Hummus Sandwich

This sandwich is creamy, crunchy, sweet, savory, full of flavor and nutrients! Perfect for a summer day at the beach, a picnic, or or a casual lunch at home. Inspired by the delicious tropical hummus sub at La Sandwicherie in Miami.

Ingredients

Sandwich Fillings

  • 1 cup mango, pineapple, papaya diced
  • ½ avocado diced
  • ¼ cucumber sliced
  • 1 tomato sliced
  • Romain lettuce
  • 2 tbsp hummus store bought or homemade
  • French vinaigrette store bought or homemade
  • 1 12 inch baguette

Instructions

  • If using frozen fruit. Let them thaw at room temperature while you prepare the rest of the ingredients.
  • Slice the 1 12 inch baguette in half and spread a thin layer of 2 tbsp hummus on both sides.
  • Add Romain lettuce, ¼ cucumber, and 1 tomato.
  • Chop the 1 cup mango, pineapple, papaya and ½ avocado. Toss it together in a bowl and add it to the sandwich.
  • Top it with a generous drizzle of French vinaigrette dressing.
  • Wrap the sandwich in parchment paper or foil, and enjoy!

Notes
