A delicious way to enjoy a hearty kale salad
Kale was once just a tough leafy green used as decor in delis. Now it's known for its amazing benefits, but not so much for its amazing taste and texture. If you struggle to enjoy kale, perhaps give this recipe a go.

What makes this recipe good?
Massage the kale! This is huge in making it softer, and in return makes it easier to chew and digest. Our trick is to massage the avocado into the kale, not only does it make is even more soft, it also adds a delicious creamy layer to the kale that makes it so much more pleasant to enjoy.

Ingredients
- Kale
- Avocado
- Olive Oil
- Fresh Lemon Juice
- Nutritional Yeast
- Onion + Garlic Powder
- Hemp Seeds - Pepitas and sunflower seeds also work nicely in this
- Salt

Ingredients for croutons
- Bread - whatever you already have would work fine. This is a great recipe to use up old bread.
- Oil - we use olive oil
- Seasoning - feel free to get creative here. Use spices you enjoy. We love using Italian seasoning and garlic powder.
Making homemade croutons in an air-fryer
- To make use of time, start by prepping the croutons. Cut the bread, oil it, season it, and toss it in the air fryer.
- While the croutons crisp up, prep the salad.






Making the avocado massage kale salad
- With clean hands massage the avocado and kale for a couple of minutes. You will notice the kale will become much softer and reduce in size.
- Add fresh lemon juice, nutritional yeast, hemp seeds, salt and pepper, and toss.
- Serve and top with crispy croutons!









How to store homemade croutons
Make sure the croutons are completely dry before storing. Use an airtight container and keep in your pantry for about a week.

- 1 bunch kale
- 1 avocado
- 1 Tbsp extra virgin olive oil
- 1 lemon juiced
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 Tbsp nutritional yeast
- 2 Tbsp hemp seeds
- ¼ tsp salt or to taste
Homemade Croutons
- bread whatever you have on had would work
- olive oil
- Italian seasoning
- garlic powder
- salt
Instructions
Avocado Massaged Kale Salad
- Using clean hands, massage 1 bunch kale and 1 avocado for a couple minutes. This helps the kale become soft making it easier to chew and digest, plus it gets a little creamy layer from the avocado.
- Add 1 Tbsp extra virgin olive oil, 1 lemon (juiced), 1 tsp onion powder, 1 tsp garlic powder, 2 Tbsp nutritional yeast, 2 Tbsp hemp seeds, ¼ tsp salt and mix.
Homemade Croutons
- Cut bread into small cubes and season it with olive oil, garlic powder, Italian seasoning , and salt.
- Air fry the croutons at 380 °F for 6 - 8 minutes, or until golden brown and crunchy.
