How ripe should plantains be for maduros?

For this recipe it's best to use very ripe plantains where the skin has started turning black.

How to peel a plantain

Unlike the common banana, plantains have a tougher skin and require a knife to peel.

Cut off the ends and run the knife down the center of the plantain to peel off the skin. Then slice the plantain diagonally.

How to fry sweet plantains

  1. Use enough oil to coat the bottom of your pan. Heat on medium and fry the plantain slices until golden brown and the edges are crispy and caramelized.

2. Once they are done cooking, place them on a plate with some paper towels to absorb the excess oil.

  • Peel the plantain and cut into ½ inch diagonal slices.

  • Once the plantains are done cooking, place on a plate with paper towels to remove excess oil.
