Banana Bread with Nuts and Chocolate Chips (oil free)

A delicious and simple recipe for those very ripe bananas sitting on your counter.

Banana bread is something everyone should have a recipe for. As one of the most common and affordable fruits, especially for those of us in or near the tropics, we assume it's probably a fruit that can often go bad on your kitchen counter, as it sometimes happens to us. So if you don't like to eat over ripe bananas, notice that you often let bananas get too ripe, well - let's make use of them!

  • ripe bananas
  • flour
  • sugar
  • apple sauce
  • soy milk
  • vanilla extract
  • baking soda + baking powder
  • nuts: we typically use walnuts but ran out, so we used almonds.
  • chocolate chips

Feel free to substitute the nuts and chocolate for raisins or seeds.

How ripe should bananas be for banana bread?

The more ripe, the more sweet. So we like to use bananas that more black than yellow. Don't use bananas that aren't ripe, they wont make your banana bread sweet.

How to make banana bread

  1. In a large mixing bowl, place the 3 ripe bananas.
  2. Mash them using a fork. Small lumps of banana are okay.
  3. Mix up the wet ingredients, and in the same bowl, add the dry ingredients.
  4. Gentle mix until most of the flour has been combined.

5. Add the nuts and chocolate.
6. Transfer to a loaf pan with parchment paper. Using clips to hold the sides of the parchment paper helps when pouring the dough in.
7. Top with chopped nuts and chocolate chips and bake.
8. Let the baked banana bread cool before slicing.

  • 1 large mixing bowl
  • 1 loaf pan

Ingredients

  • 3 ripe bananas
  • cup apple sauce
  • cup sugar
  • 2 Tbsp soy milk
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup nuts
  • ¼ cup chocolate

Instructions

  • Preheat oven to 350 °F and gather all your ingredients.
  • In a large mixing bowl, place the 3 ripe bananas and mash them using a fork. Small lumps of banana are okay. Then add ⅓ cup apple sauce, ⅓ cup sugar, 2 Tbsp soy milk, 1 tsp vanilla extract - mix that all up using the fork.
  • Now add 2 cups all purpose flour, 1 tsp baking soda, 1 tsp baking powder, ¼ tsp salt - gently mix until most of the flour has been combined. Try not to over mix.
  • Roughly chop and add ¼ cup nuts and ¼ cup chocolate, gently fold that into the mixture and pour into a loaf pan with parchment paper. Top with some chopped nuts and chocolate if you want.
  • Bake in oven for 40 minutes or until toothpick comes out clean.
