A staple in Latin and Caribbean cuisines, plátanos maduros are fried sweet plantains that are caramelized, soft, and absolutely delicious.

Why you'll love fried sweet plantains
Beloved by almost everyone, fried plantains are sweet, soft, and perfectly caramelized, giving each little piece a slightly crispy edge. They are almost like a delicious candy side dish, mmmm - so good! Plus they enhance any savory dish like Cuban picadillo.
Also, this recipe is so simple it uses just two ingredients! It's almost hard to justify having to make a recipe post for fried plantains, but many people aren't familiar with this side dish.
Ingredients
- Ripe plantains - with black spots
- Oil - for frying

How ripe should plantains be for maduros?
For this recipe it's best to use very ripe plantains where the skin has started turning black.
How to peel a plantain
Unlike the common banana, plantains have a tougher skin and require a knife to peel.

Cut off the ends and run the knife down the center of the plantain to peel off the skin. Then slice the plantain diagonally.
How to fry sweet plantains

- Use enough oil to coat the bottom of your pan. Heat on medium and fry the plantain slices until golden brown and the edges are crispy and caramelized.

2. Once they are done cooking, place them on a plate with some paper towels to absorb the excess oil.

3. Serve and enjoy warm!
