- 1 clove garlic minced
- 1 large lemon juiced
- 2 Tbsp parsley chopped
- 2 Tbsp olive oil
- ½ tsp salt

- Prepare the marinade: In a large bowl combine the minced 1 clove garlic, chopped 2 Tbsp parsley, 1 large lemon juiced, 2 Tbsp olive oil, and ½ tsp salt
- Prepare the squash: Cut 3 yellow squash in half, length-wise, and gently toss into the bowl with the marinade until coated.
- Cook: Place squash on the grill in a single layer. Cook for 2 - 3 minutes or until squash has brown grill marks. Repeat on the other side.
- Serve: Top with any extra marinade and garnish with more fresh parsley.
