Tropical Fruit and Hummus Sandwich

Inspired by the delicious tropical hummus sub at La Sandwicherie in Miami.

I never would have thought I would love this sandwich so much. I think most people don't realize the power of salty and sweet, and yes, we are a pineapple on pizza household - but it's freaking amazing! The first time I saw this sandwich on their menu I genuinely thought I wouldn't like it, the ingredients seemed so odd to me; oh boy was I wrong. The tropical flavors of mango, papaya, and pineapple remind us of home, combined with creamy hummus, lettuce, cucumber and tomato, topped with a delicious french vinaigrette, mmhmmmm! This is a super unique sandwich for vegans and non-vegans to enjoy.

What Does the Tropical Fruit and Hummus Sandwich Taste Like?

If you haven't tried the original from La Sandwicherie in Miami, we believe this is pretty close to the real thing. This is nothing like your ordinary sandwich, this sandwich is a vibrant mix of flavors and textures. It's creamy, crunchy, sweet, savory, full of flavor and nutrients - oh so good! Perfect for a summer day at the beach.

Ingredients:

  • Avocado
  • Mango
  • Pineapple
  • Papaya
  • Cucumbers
  • Tomatoes
  • Lettuce
  • Hummus (store bought or homemade)
  • French Vinaigrette (store bought or homemade)

Optional

  • Black Olives
  • Cornichons

How to Make the Tropical Fruit and Hummus Sandwich

If you are using store bought ingredients, this recipe can really come together fairly quickly; but even if you make your own hummus and vinaigrette, it wont take too long.

How to Make Hummus

Ingredients

  • Can Chickpeas
  • Tahini
  • Cold Water
  • Salt
  • Lemon juice
  1. Blend all the ingredients in a food processor except for the water.
  2. Slowly add more water until desired creaminess.

How to Make French Vinaigrette Dressing

Ingredients

  • Olive Oil
  • Dijon Mustard
  • Red Wine Vinegar
  • Salt and Pepper
  1. Mix equal parts oil, mustard, vinegar.
  2. Add salt and pepper to taste.
  3. Store in an airtight container in the fridge for 1-2 weeks.

How Messy is this Sandwich?

We gotta admit, this can be a pretty messy sandwich to eat. We suggest wrapping the sandwich up like they do in sub shops. Use parchment paper or foil to wrap the sandwich, it will help contain all the juiciness and slippery fruit pieces. Also, scoop out the inside of the baguette to leave a cavity for the filling. This helps a little in making a space for all the chopped fruits, preventing them from sliding out after each bite.

Don't let this caution deter you from trying this unique sandwich packed with fruits and veggies! We've been eating this for lunch for the past three days, we cant get enough!

Alternative to the Messy Sandwich

Turn it into a salad! Chop all the ingredients, replace the bread with some croutons and you're good! Or turn it into a wrap by using a tortilla wrap instead of the baguette. We recommend to mix all the ingredients in the salad for the perfect bite every time.

Can I Use Frozen Fruits?

Yep! Simply rinse the frozen fruits under cold water using a colander. Roughly chop them a little and let them sit at room temperature while you prep the other ingredients. It's not necessary to chop the frozen fruit, but we find that chopping helps them thaw quicker.

Ingredients

Sandwich Fillings

  • Mango diced
  • Pineapple diced
  • Papaya diced
  • Avocado diced
  • Romain Lettuce
  • Cucumbers sliced
  • Tomatoes sliced
  • Hummus store bought or homemade
  • French Vinaigrette store bought or homemade
  • Small baguette

Homemade Hummus

  • 1 can Chickpeas
  • Tahini
  • Cold water
  • Olive oil
  • Lemon juice
  • Salt and pepper to taste

Homemade French Vinaigrette Dressing

  • ¼ cup Dijon mustard
  • ¼ cup Olive oil
  • ¼ cup Red wine vinegar
  • Salt and pepper to taste

Instructions

  • If using frozen fruit. Let them thaw at room temperature while you prepare the rest of the ingredients.
  • Slice the baguette in half and spread a thin layer of hummus on both sides.
  • Add lettuce, cucumbers, and tomatoes.
  • Chop the mango, papaya, pineapple and avocado. Toss it together in a bowl and add it to the sandwich.
  • Top it with a generous drizzle of French vinaigrette dressing.
  • Wrap the sandwich in parchment paper or foil, and enjoy!
