Pasta Sauce
- 2 cups Spinach
- 1 cup Edamame
- 1 cup Water reserve from boiling pasta
- ½ cup Cashews
- ¼ cup Lemon Juice fresh is best
- 1 bunch Basil
- 1 Avocado
- 2 cloves Garlic
- 2 Tbsp Olive Oil
- ¼ tsp Salt
Prep: Boil some water and soak 1/2 cup Cashews for at least 10 minutes.
Make the Sauce: While cashews soak, gather 2 cups Spinach, 1 cup Edamame, 1 Avocado,1 bunch Basil, 2 cloves Garlic,1 cup Water, 1/4 cup Lemon Juice, 2 Tbsp Olive Oil, 1/4 tsp Salt and put it in a blender. Drain and rinse the cashews, and add them to the other ingredients and blend.
Cook: Boil 1 lbs Pasta according to package directions while you make the sauce. Feel free to reserve some of the water to use in the sauce.
Serve: Once the pasta is cooked and ready, combine with the sauce and serve topped with fresh basil and black pepper.
