Pasta Sauce
- 2 cups spinach
- 1 cup edamame
- 1 cup water
- ½ cup cashews
- ¼ cup lemon juice
- 1 bunch basil
- 1 avocado
- 2 cloves garlic
- 2 Tbsp oil
- ¼ tsp salt
Boil some water and soak 1/2 cup cashews for at least 10 minutes.
While cashews soak, gather 2 cups spinach, 1 cup edamame, 1 avocado,1 bunch basil, 2 cloves garlic,1 cup water, 1/4 cup lemon juice, 2 Tbsp oil, 1/4 tsp salt and put it in a blender.
Drain and rinse the cashews, and add them to the other ingredients and blend.
Cook 1 lbs pasta according to package directions while you make the sauce.
Once the pasta is cooked and ready, combine with the sauce and serve.
