  • 1 Blender

Ingredients

  • 1 lb tomatoes
  • 1 red bell pepper
  • 1 large cucumber
  • 1 clove garlic
  • ½ onion
  • ½ cup vegetable broth
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • ½ tsp tabasco

Instructions

  • Peel the cucumber, remove the seeds, and coarsely chop.
    Coarsely chop bell pepper, onion and tomatoes.
  • In a blender, combine all the ingredients and blend.
  • Cover and refrigerate until cold.
