Ingredients
Pasta Sauce
- 2 cups spinach
- 1 cup edamame
- 1 cup water
- ½ cup cashews
- ¼ cup lemon juice
- 1 bunch basil
- 1 avocado
- 2 cloves garlic
- 2 Tbsp oil
- ¼ tsp salt
Other
- 1 lbs pasta of choice
Instructions
- Boil some water and soak the cashews for at least 10 minutes
- While cashews soak, gather all other ingredients
- Cook pasta according to package directions while you make the sauce
- Drain water from cashews and add them to the other ingredients and blend
- Once the pasta is cooked and ready, mix sauce in and serve
