How to Make the Green Goddess Pasta Sauce?

This is probably one of the simplest sauce to make. Simply blend all the ingredients until it is as smooth as your blender can get it, although a little crunch is totally fine and makes for a more pesto texture.

  • 1 blender or food processor

Ingredients

Pasta Sauce

  • 2 cups Spinach
  • 1 cup Edamame
  • 1 cup Water reserve from boiling pasta
  • ½ cup Cashews
  • ¼ cup Lemon Juice fresh is best
  • 1 bunch Basil
  • 1 Avocado
  • 2 cloves Garlic
  • 2 Tbsp Olive Oil
  • ¼ tsp Salt

Other

  • 1 lbs Pasta of choice **

Instructions

  • Prep: Boil some water and soak 1/2 cup Cashews for at least 10 minutes.
  • Make the Sauce: While cashews soak, gather 2 cups Spinach, 1 cup Edamame, 1 Avocado,1 bunch Basil, 2 cloves Garlic,1 cup Water, 1/4 cup Lemon Juice, 2 Tbsp Olive Oil, 1/4 tsp Salt and put it in a blender. Drain and rinse the cashews, and add them to the other ingredients and blend.
  • Cook: Boil 1 lbs Pasta according to package directions while you make the sauce. Feel free to reserve some of the water to use in the sauce.
  • Serve: Once the pasta is cooked and ready, combine with the sauce and serve topped with fresh basil and black pepper.
